When I say Dominican I think of Punta Cana, beautiful beaches, filled with crazy American teenagers that you need to get away from and wonderful views like the one below. Now I know its freaking cold outside and this weather is way too close to being a royal pain in my lower bottom but one can only dream right?
Wrong! One can also cook and enjoy the same taste.
Here it goes, ready in 30 minutes, simple Dominican Yellow yummy Rice:
You are gonna need: Vegetable Oil, Half red onion chopped, Half red or green pepper chopped, 1 celery stalk chopped, 2 fresh green onions chopped, 2 chopped garlic cloves, 1 bay leaf, 2 cups of chicken broth, 1 cup of plain rice, Cumin seeds, turmeric, cayenne pepper, salt, pepper, coriander and fresh parsley,
In a sauce pan, over medium heat, heat the oil. Add the vegetables and cook for about 5 minutes, they will get a little soft and you will know its time. Add garlic and all the spices and cook, while stirring and making sure that nothing burns – it will look fragrant in about 2 minutes. Add the rice, mix it until its evenly distributed, add salt to taste and the broth while you bring the whole substance to boil. Stir once, lower the heat to low, cover and cook for 17 minutes.
Afterwards just remove from the heat and let it sit uncovered for around 5-10 minutes. Uncover and add chopped coriander and parsley. Serve it immediately.
