Happy Monday!
I am not going to bore you with a fancy shmancy recipes other than comfort food for this outrageous Monday.
There goes the simplicity:
Your standard French fries (hot tip – cover the pan with a lid and they will fry faster), toss them in a little paprika powder, oregano, coarse salt and let them sit in a paper towel to remove excess oil.
For the dipping sauce, grab a ripe avocado, slice it real thin and then make little cubes – put them in a mug and with the back of a fork, gently mash them together, by adding a little oregano, a little salt and if your don’t plan to get out of the house crushed garlic. Add a little of the yummiest siracha sauce (or a lot if that’s your fancy…) and just a spoonful of mayonnaise. Mix it together and mash it all up until all the ingredients are combined.
You can dip the potatoes or you can just throw the sauce on top and eat it like that.
For a healthier alternative – bake the potatoes – cube them, toss them with a little seasoning and in the oven until tender but lets face it – this is no Monday food.
That’s it. Now eat it so you can deal with this Monday.
