There is something about toasted bread that has always had my fancy. From simple and easy toasted bread and butter with old bread that is practically uneatable to fancy bacon, avocado and cheese with yummy baguettes.
Today I will introduce a simple, yet rustic and somewhat fancy recipe especially for this summer.
All you need is:
5 minutes of prep time + 20 minutes of cooking time = 25 minutes of easy cooking.
Bread, Goat Cheese, tomatoes (cherry tomatoes work great), balsamic vinegar, basil, olive oil, garlic, salt and pepper
Preheat the oven to 210 degrees. Dice the tomatoes in big chunks or halve the cherry tomatoes, toss them in a big bowl with crushed garlic, herbs if you want to, olive oil and a little salt. Arrange them under a baking sheet (useful if you do not want to make a big mess) and season them with plenty of salt and pepper. Put them in the oven and let them bake for 20 minutes.
While the tomatoes baking, it’s time to toast the bread. Now bread toasting depends on your liking but I especially enjoy getting a pan hot, with a drizzle of olive oil. Now place the bread but keep in mind that it may burn, and then flip.
Top it off with goat cheese, balsamic, basil and drizzle it with some olive oil. Add the tomatoes, and salt and pepper.
