Hot summers and steamy afternoons after work are the 101 for beers and bar food. Not wanting to talk about beer (note the cravings now) one can talk a little about food and chicken wings are the 1-2 of bar food. It does not matter how you serve it, or how you cook it – a good old pan-fried, deep-fried, baked or whatever works perfectly.

Let me show you how we can make these delicious treats a little healthy, somewhat interesting and a lot more delicious. The golden rule is that we bake, add a little orient and ta-da – yummy.

10 minutes of prep time + 1 ½ hours of cook time = 1 hour and 40 minutes of easy cooking.

1kg Chicken Wings, 1 table spoon of baking powder, Half a tea spoon of salt, 2 table spoons of soy sauce, 2 limes, 2 cloves of garlic, Fresh pepper, 1 chili pepper( if you into that)

Considering that your oven has an upper and lower rack position, preheat the oven on 130 degrees. Combine the wings with the baking powder and salt – I usually use zip lock bags for a mess free environment, but any plastic bag and/or plate will do. Arrange the wings in the oven rack, keeping in mind that the skin side is up and there is only one single layer. Bake for 30 minutes in the lower rack position.

Move the rack in the upper position, increase the temperature to 220 degrees and bake for 40 to 50 minutes – they should be brown and crispy. Take it out from the oven and let it rest for five minutes.

Mix together, soy sauce, lime juice, sugar, garlic and the black pepper, the either toss or pour on top of the wings – I like to do this in a large bowl so the wings are perfectly coated and the mess is localized.
